With Christmas Day literally only a couple of days away, I wanted to make a simple last minutes festive treat that me and my partner could enjoy over the next few days.
Since I’m currently pregnant (yesterday was actually my due date!), I didn’t want to spend hours in the kitchen, so something quick and easy was what I had in mind. Something that I didn’t have to bake, or use any equipment for (the last thing I need right now is an extra load of washing up to do!). A no brainer of a dessert that I couldn’t get wrong, but would also be moreish and satisfying.
For most of my pregnancy I was completely off chocolate, and most sweet things for that matter. The only sweet things I could tolerate were fruit. This came as quite a shock because I’ve always had a major sweet tooth and never thought that desserts, chocolate specifically, could EVER make me feel nauseous!
So for months I avoided anything chocolate, which I found so extremely difficult since most of my recipe creations contained chocolate in some form. Chocolate recipes are also the type of recipes that you, my readers and followers, seem to enjoy the most.
My aversion to chocolate only eased off only a month or so ago during my third trimester. Now my chocolate cravings have come back with a vengeance. It’s almost like my body & brain feel like they’ve missed out on months of chocolate eating enjoyment and are trying to catch up.

What you’ll need to make these chocolate wreaths:
Pistachios – I toasted my pistachios first in a dry pan to help bring out their nutty flavour. Toasting them makes such a big difference! Or you can use roasted pistachios that have already been salted and roasted for ease. Other nuts or seeds will also work, but I love the combination of pistachios and dates – they go so well together!
Dates – Soft Palestinian Medjool dates are my go to that I roughly chopped into pieces. Again you can use any dried fruit you prefer or have available.
Dark chocolate – I always use a dark chocolate bar with 70% cocoa solids or above. It’s packed with antioxidants and I love the intense rich flavour. You can use any you like the taste of. Milk chocolate will also work.
Orange zest – A bit of orange zest makes these date pistachio chocolate wreathes taste super festive. Plus the flavour goes so well with pistachios and chocolate.
How to make these date pistachio chocolate wreaths:

Start off by toasting the pistachios in a dry pan for a few minutes to help bring out their nutty flavour.

Break up the chocolate into a heat-proof bowl and microwave on high until melted. Make sure to give it a stir every 30 seconds to ensure it doesn’t burn!

Drizzle some chocolate at the bottom of silicon doughnut moulds (or moulds of choice).

Scatter the chopped dates and toasted pistachios on top, then drizzle more chocolate.

Finally sprinkle on some of the orange zest.

- 80g pistachios
- Zest of 1 orange
- 100g dark chocolate
Instructions
- Start off by toasting the pistachios in a dry pan for a few minutes to help bring out their nutty flavour.
