Cottage cheese – I use full-fat cottage cheese for a creamier and richer mousse, but you can use a fat-free cottage cheese. If you do, just keep in mind that the result won’t be as creamy.
 
Cocoa powder – To add a rich chocolate flavour and lots of polyphenols. 
 
Peanut butter – I add smooth peanut butter for taste, but also to boost the nutritional value of this cottage cheese chocolate mousse. You can use other nut butters or a seed butter for a nut-free version. 
 
Maple syrup – No mousse is complete without some sort of sweetness. I like to use maple syrup because I usually have some in my kitchen cupboard, but feel free to use other sweeteners like honey, agave, etc.
 
Salt & vanilla – Both work to enhance the flavours.

  • 4 tbsp honey
  • 3 tbsp cocoa
