Banana Bread Mug Cake
Ingredients
- 1 ripe banana
- 1 egg
- 1 tbsp peanut butter
- 1 tbsp maple syrup
- 2 tbsp ground almonds
- 2 tbsp oat flour
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- Pinch of salt
- Chocolate chips
Instructions
- Mash the banana in a bowl, then mix in the egg, peanut butter and maple syrup.
- Add the ground almonds, oat flour, baking powder, cinnamon and a pinch of salt. Mix to form a batter.
- Divide between 2 lightly oiled ramekins, then top with a sprinkle of chocolate chips.
- Microwave on high for 1-2 minutes, checking every 30 seconds.
- Alternatively you can bake in a preheated oven at 180C/160C fan/350F for 15 minutes.

Is there a peanut allergy to this recipe?
It’s not suitable for nut allergy sufferers as it contains ground almonds and nut butter. You can substitute the ground almonds with more oat flour and use coconut oil instead of the nut butter. Hope that helps 🙂
The problem with this cake/bread is that it’s so simple to make that I ended up making two within 15 minutes.
Seriously sooooo good! Recipes like this are why switching to a 100% whole food diet is so easy (I skipped the chocolate chips). Only thing I did differently the second time around was cutting the maple syrup in half bc it was a little too sweet for my liking with a full tbsp. Thanks for the delicious recipe!!!

This was so good. Too good. The peanut butter definitely added dimension. Had it saved from IG and finally had to use my 2 overly ripe bananas, so I made double. Finished half easily, could’ve polished the rest also but talked myself out of it. Will make again.
