Vegan Blueberry Bounty Bars
I’m really enjoying coming up with healthier vegan and gluten-free alternatives to some of my favourite treats and chocolate bars. I’ve already made my own healthified versions of Twix bars and Snickers and naturally I had to move on to creating a healthier version of bounty bars next!
Bounty bars are up there as one of my all time favourite chocolate bars. As you may be able to tell by now, I don’t actually just have one favourite – I have many favourites that I like equally.
The original bounty offers nothing in terms of nutrition. My version is higher in fibre and minerals like copper, iron, magnesium, zinc and manganese. And even though I used maple syrup to sweeten they’re still lower in sugar compared to the real thing.
To make them even healthier, I added in some Arctic Power Berries Blueberry powder to pack in some antioxidants and vitamins.
Note that these bounty bars are still high in fat and should be considered as a treat to be enjoyed in moderation. But as long as you’re eating lots of fruit, vegetables, wholegrains, nuts, seeds, beans and pulses you can indulge in something like this every once and a while.
These vegan blueberry bounty bars would make a perfect treat for Valentine’s day with their delicious and creamy lilacy filling.
In case you’re wondering, you can find Arctic Power Berries powders at places like Ocado, Selfridges and now Waitrose.

Hello! Just a question if in my country I don’t find the powder what can I use instead?
Thanks
DIANA ROQUE
You can use any powder, like acai or raspberry. Otherwise you can leave it out completely 🙂
They look like heaven! ?
Thank you Mel 🙂
How will using real blueberries make it different?
It will add a lot more liquid so you wouldn’t be able to use as much and probably need to use less coconut cream making them less rich. If you try it with blueberries let me know how they turned out 🙂
Can you use real blueberries or raspberries or strawberries etc? Thanks
I haven’t tried it myself as adding fresh berries will add a lot of liquid. You might need to use less coconut cream resulting in a less rich bar.
I’ve just made these and they are fantastic and I haven’t even put the chocolate on yet. Wow!
I’m so glad you like them 😀
Could I use real blueberries please???
I haven’t tried using real blueberries as they have a lot of liquid. If you do try it let me know how they turn out. You can leave out the blueberry part completely and create plain bounty bars 🙂
How do you get that perfect chocolate bar shape?
I pressed the mixture in a loaf tin and sliced it into bars once frozen as I mentioned in the instructions.
how about using jelly power??
Hi these bars look amazing vouldnu please send me the ingredients
Thank u
Can i use coconut oil instead of the coconut butter?
Thanks:)
Yes you can, they just won’t be as rich but still delicious 🙂
I am so excited to make them .. i have already ordered the blueberry powder ?… can i use the chocolate coating you made for the caramel bars instead of dark chocolate ?
These look amazing! How long would it keep and can it survive in room temperature?
They will probably be ok at room temperature for about an hour as long as the room is not too warm. I would definitely recommend keeping it in the fridge until you’re ready to serve.
Hi Nadia,
Made the blueberry bounties yesterday night and must say they look great and taste delicious.
However, I had some problems to have the chocolate coating done properly. (melting (au bain marie) was no problem, but coating itself wasn’t easy)
You have any advice for me on this part?
Thx
Patrick
Hi Patrick. Glad you liked the bars 🙂 what was the problem with coating the bars?
Hi Nadia,
(sorry for not coming back to you earlier)
As the bars are relatively big, I needed an enormous amount of melted chocolate to have them dipped properly in it. Especially the last ones of course. You know what I mean? 🙂
I already made them a little bit smaller, but still… . Following your recipe, halfway I don’t have enough chocolate left (not enough for dipping properly).
You have any tips or tricks for a “kitchen amateur”on this?
Thx
Patrick
You can always use the drizzling technique, like I do in this video https://www.youtube.com/watch?v=_1zr-EyKhKA so instead of dipping the whole bar in the chocolate, you place it on a fork and use a spoon to drizzle the chocolate on top. Because the bars are cold, they chocolate will solidify pretty quick. Let me know if you try this method 🙂
Hi just wondering how long these would last in the fridge? Thank you
These are gorgeous!
I’ve just made these and they taste amazing HOWEVER, trying to coat them in chocolate was an absolute nightmare. The bars started to melt and the chocolate solidified so it couldn’t be spread on. When I used the dip method they fell apart!
Please any help or tips!!!
Were the bars completely frozen before coating them? You could try drizzling the melted chocolate onto the bars rather than dipping them like I do in this video https://www.youtube.com/watch?v=_1zr-EyKhKA Hope that helps.
Doesnt chocolate contain milk? I don’t see how these are vegan
I used dark chocolate with 70% cocoa solids. Most good quality dark chocolate doesn’t contain dairy, just have a look at the ingredients list at the back of the package. If still in doubt or if you don’t like dark chocolate, you can easily find vegan milk chocolate.
