Super Simple Vegan Pancakes

Sundays are for pancakes! Or sometimes waffles, but pancakes are much easier to make and all you need is a bowl to mix the ingredients and a frying pan.

Although I’m not a fan of non-stick pans and I wouldn’t recommend them since they’re usually made with materials and metals that are harmful to our health, when it comes to pancakes no other type of pan seems to work for me! I’ve tried both ceramic and stainless steel pans to make pancakes, but they always stick no matter what I do! It’s so frustrating when you prepare the ingredients and you have an idea in your head of what you would like the end result to look like only for it to be an epic fail because of the type of pan you’re using.  

These pancakes are so easy. With only 4 main ingredients and no eggs, no oil and you can even use plain water if you’ve ran out of milk! 


Super Simple Vegan Pancakes

Serves: 2-3

Ingredients:

2/3 cup oat flour – plain oats ground up into a flour in the food processor. Use gluten-free oats if allergic/intolerant
2/3 cup milk of choice – I used unsweetened soya milk
1 tbsp almond butter
1/2 tsp baking powder
1 tbsp maple syrup – optional
1/2 tsp cinnamon – optional
Pinch of salt – optional

Method:

Mix together the oat flour, salt, baking powder and cinnamon.
Pour in the milk and almond butter. Mix to combine.
Leave to sit for 15-30 minutes
Heat 1 tsp coconut oil in a non-stick frying pan. Make sure the pan is hot before pouring in the batter.
Pour in 2 tbsp of the batter and cook over a medium heat for a minute or so. Flip and cook on the other side for a few more seconds.
Serve with fruit, tahini/nut butter and maple syrup.
