Raw Chocolate & Nut Energy Bites

I’ve recently cut out a few things from my diet including added sugar, gluten, processed foods and caffeinated drinks to try and heal my gut and reduce my anxiety levels. There are 2 things I’m really REALLY missing so far – tea and chocolate!

Over the years I have developed the habit of drinking way too much black tea. I could easily drink 7 cups a day, especially when I’m home and/or in the evenings, which as you can imagine it the worst time to be drinking caffeine! I also got used to ending each meal with something sweet, usually a square of dark chocolate. Although I would always have the 72-90% cocoa varieties, but they still have added sugar and since I’m cutting sugar out, I had to wave bye bye to my after meal treat. However, I still crave something sweet after my meals and these raw chocolate & nut energy bites are the perfect treat for me!

Made using dates, cashews, almond butter, coconut oil and cocoa powder – such a simple recipe and list of ingredients but the end result is unbelievably good! The only problem I have with them is that they’re ridiculously addictive! It’s impossible for me to only one!

These raw chocolate & nut energy bites are also vegan, gluten free, dairy free, high in healthy fats, protein and contain no added sugar

If you’re like me and you like to have a sweet treat after meals, or if you like to snack between meals, make a big batch of these energy bites for an easy, fuss-free option. They’re great to take with you to work, school, college or anywhere else! You can even have them for breakfast if you don’t have time in the morning to prepare a sit down meal.

Ingredients
  1. 2 cups (300g) dates
  2. 1 cup (130g) cashews
  3. 1/3 cup (5 tbsp) almond butter
  4. 2 tbsp coconut oil
  5. 2 tbsp cocoa or cacao powder
  6. Pinch of salt
Instructions
  1. Place all the ingredients into a food processor and blend for a few minutes. First you'll have a crumbly mixture but as you continue to blend this will turn into a sticky dough that hold together when forming into a ball.
  2. Roll the mixture between your hands into little balls. You can either leave them as they are or coat them with things like crushed nuts, coconut, cocoa, cinnamon...etc
  3. Place in the fridge and leave them to chill for an hour or so.
  4. *Because it's cold where I am at the moment, I prefer storing them at room temperature, but during summer I would store them in the fridge.
