Pumpkin seeds – I always have a bag or two of pumpkin seeds in my cupboard. They’e such an underrated ingredient in desserts and snacks. Packed with nutrients, including plant-based protein, fibre, magnesium, zinc, and healthy fats that support heart health, immunity, and digestion. Their combination of antioxidants and minerals also helps promote steady energy and overall wellness.
Maple syrup – I use a little to sweeten, but more so to use as the glue that will hold these pumpkin seed chocolate bites together.
Dark chocolate – Pumpkin seeds and dark chocolate is such a magical flavour combination. I always opt for 70% dark chocolate or higher, but you can omit the chocolate if you want a lower sugar snack – they still taste amazing without. If dark chocolate is not your thing, you can use milk or even white chocolate.
Salt – A pinch is all you need to help enhance the flavour of the pumpkin seeds.

How to make these pumpkin seed chocolate bites:

Preheat oven to 180C/160C fan/350F.

Add the pumpkin seeds, maple syrup and a pinch of salt to to a bowl. Mix to coat all the seeds evenly.

Option 1 – Place a lightly oiled round cookie cutter on a baking sheet lined with parchment paper. Spoon a couple of teaspoons into the cutter and press down. Gently remove the cutter and repeat.

Option 2 – If you don’t have a cookie cutter, you can spoon some of the mixture straight onto the lined baking sheet to make clusters instead.

Bake for 15-20 minutes. Leave to cool completely to set.

Once cooled you can dip them or coat them in chocolate. Or do a mixture of both!

- 50 g dark chocolate melted
Instructions
- Preheat oven to 180C/160C fan/350F.
- Add the pumpkin seeds, maple syrup and a pinch of salt to to a bowl. Mix to coat all the seeds evenly.

I don’t understand why these need to be baked. If you chill them, they will firm up.
