What you’ll need to make these pistachio date balls:

Medjool dates – I love using Palestinian Medjool dates as they have the best fudgy, soft texture and have just the right level of sweetness without being too sweet. 

Banana – I love the contrast in textures between the crunchy chocolate shell, fudgy date, soft banana and creamy pistachio butter. 

Pistachio butter – I use natural creamy pistachio butter (this brand is my go-to) with no added sugar. It tastes amazing and works so well with the dates and dark chocolate. 

Dark chocolate – I always opt for 70% dark chocolate or higher. It’s packed with antioxidants and works so well to balance out the sweetness of the dates with its bitter notes. 

Chopped pistachios – I added these in the melted dark chocolate for a bit of crunch, but this is optional.

How to make these pistachio date balls:

  • Spray 2 pieces of parchment paper with olive oil cooking spray. Place the pitted date on one and top with the other. Use a rolling pin to roll out the date as thinly as possible.
  • Place a piece of banana in the centre and top with a little bit of pistachio butter. Use a spatula to gently peel the edges of the flattened date away from the paper and over the banana. Pinch the date at the top, then roll between your hands to cover up the filling an seal.
  • Break up the dark chocolate in a heat-proof bowl and melt in the microwave, stirring every few seconds until completely melted. Fold in the optional chopped pistachios
  • Dip each date balls in the chocolate to coat, top with more chopped pistachios and refrigerate until set.
