A creamy pudding topped with a chocolate ganache – this healthy tahini pudding is not only delicious, but it’s made with better-for-you ingredients like tofu, tahini and dark chocolate. Each serving also offers 11g protein with no protein powder in sight! Not bad for a yummy dessert.
This healthy tahini pudding is inspired by my popular tofu chocolate mousse recipe that has recently been making the rounds on Instagram and TikTok with so many influencers recreating it!
I just had to make a tahini version (with chocolate of course) because I still think that tahini is such an underrated ingredient. Especially when compared to some of its counterparts like peanut butter. This may be a controversial take, but to me, tahini is a thousand times better than peanut butter. I said what I said! Can you blame me, I grew up eating it almost every single day so now I’m rightly obsessed with it.
It still shocks me that years after starting this blog and my social channels sharing the countless ways I’ve used tahini in recipes that I still get comments asking what tahini is! I’m aware of the fact it’s not well known in some parts of the world, but with the rise of popularity of the Middle Eastern cuisine, I thought I’d be getting fewer questions about it by now.
I don’t think I’ll ever get bored of using tahini in recipes, especially in desserts. I do think it works so well in so many sweet treats and I’m no where near done experimenting with the stuff!
Why I love making this healthy tahini pudding:
Silken tofu is a fantastic way to enjoy a healthy, creamy dessert without a lot of fuss. It’s vegan, gluten-free, and endlessly adaptable, making it perfect for experimenting with different flavours. Its mild flavour means that you can easily mask it with other ingredients like nut butters, cocoa, spices and fruit (lemon, orange, raspberry, etc.).
As well as being more nutritious compared to other puddings with a good amount of protein, this healthy tahini pudding can be easily adjusted to likes, preferences and dietary needs. For example you can add extra tahini for a more intense taste, or you can swap the tahini with a nut butter like peanut or almond if you prefer. You can also adjust the sweetness as you go to suit your taste buds.
This pudding is vegan, gluten-free and nut-free, so a great dessert option for those with common allergies/intolerances.
Why you need to try this healthy tahini pudding:
Not only does silken tofu provide the perfect base for a creamy texture in a pudding, but it’s also a nutritious choice for desserts. It’s high in protein, making it satisfying enough to curb your appetite without the empty calories of traditional pudding. Plus, tofu is a great source of iron and calcium. It’s also vegan and naturally gluten-free.
If you’re anything like me and love the combination of chocolate and tahini, then this healthy tahini pudding is for you! If you’ve never tried that flavour combo before, you’re really missing out and I would suggest you run to the kitchen right now and whip this up!
As well as being tasty, this pudding is really easy to put together. You simply blend the ingredients in a blender/food processor, pour into serving glasses and chill in the fridge. I also topped them with a simple 2 ingredient chocolate tahini ganache to enhance the tahini flavour and add extra sweetness and richness.
What you need to make this healthy tahini pudding:
Silken tofu – Silken tofu is a softer, more delicate form of tofu with a custard-like consistency. Unlike firmer varieties of tofu, silken tofu blends easily into a creamy base, creating a smooth texture similar to traditional pudding. It’s also a nutritional powerhouse, rich in protein, calcium, and iron, making it a satisfying and wholesome choice for dessert.
Tahini – I always use Lebanese tahini. It has the best taste and the most amazing runny consistency, which massively helps with the blending process. I use this brand.
Maple syrup – You can use other liquid sweeteners like honey, agave, rice syrup, etc. You can also use granulated sweeteners like caster sugar. The sweetness of this healthy tahini pudding can easily be adjusted to your preference.
Salt – A pinch of salt helps enhance and bring all the flavours together.
Dark chocolate – I like to use chocolate bars with 70% cocoa solids or above, but any chocolate will work.
How to make this healthy tahini pudding:
-
I like to drain my tofu first to help make the pudding a little firmer. Gently place the tofu onto a plate lined with a couple of kitchen towels and place another couple more towels on top.
-
Place something on top to help press the tofu that’s light enough not to crush it (I used an empty small glass). Leave it to drain for a few minutes.
-
Add the tofu along with the tahini, maple syrup and a pinch of salt to a blender/food processor and blend until smooth.
-
Transfer into serving glasses and chill in the fridge for 1 hour to set.
-
Make the ganache by mixing the melted chocolate and tahini in a small bowl, then pour on top of the puddings. You can serve them straight away or return to the fridge for the ganache to set a little.
How to store your healthy tahini pudding:
Store covered in the fridge for up to 3 days. The ganache will harden and set in the fridge. If you want it to be softer, pour the ganache on top 10 minutes before you intend to serve your puddings.
