These are my healthy no-bake cheesecake bites. Little gems of smooth, tangy, and perfectly sweet, with none of the heaviness or hassle of a traditional cheesecake. They’re made with wholesome ingredients, take just minutes to throw together, and they’re easily customisable.
This recipe was inspired by my peanut butter & jam oat cakes recipe. A great example of just how easy it is to adjust to your likes or what you have available at home. I’m all for super easy recipes where you only need a few ingredients. The fewer the better as far as I’m concerned. Now that I’m a new parent, it’s more important than ever to spend less time in the kitchen while still trying to make meals/snacks that provide some nutrition. Simple changes like using light cream cheese instead of full fat and cutting out the cream and sugar makes all the difference. Using oat cakes instead of digestive biscuits as the ‘base’ also cuts down on the sugar, but also ups the fibre. It’s the small changes add up.
I used shop bought jam for ease, but homemade jam or chia jam will also work perfectly. You can find my simple raspberry chia jam recipe here.
You can easily half the recipe if you’re making it only for yourself or double it if you have more mouths to feed! They also freeze well, so make a big batch and freeze for when you fancy a quick treat.

Tastes amazing! – Even though we’re using less fat and not adding any sugar to the cream cheese layer, I feel the jam and dark chocolate add the right level of sweetness to make these healthy no-bake cheesecake bites enjoyable, but not sickly sweet or heavy on the stomach.
How to make these healthy no-bake cheesecake bites:

Simply spread the cream cheese onto one of the oat cakes and top it with a layer of jam. Sandwich with another oat cake and freeze for a couple of hours.

Dip in melted chocolate to coat, then lay them on a baking sheet lined with baking paper.

- 80 g dark chocolate
