These healthy cookie dough Easter eggs are a great lighter treat that you can make over the Easter holidays. They’re quick, easy to make and require no baking. They also happen to be vegan and gluten-free!
Easter is all about chocolate and indulging, but if you’re looking for a lighter dessert that’s better for you but still satisfies your sweet tooth, you need to give these healthy cookie dough Easter eggs a try!
I’ve always been a huge fan of easy treats that don’t take much time to prepare and require no baking. Recipes where you can simpley throw together a few basic ingredients in a bowl, then shape and refrigerate.
Even better when they’re made with better-for-you ingredients like oats, nut butter and dark chocolate.
What you’ll need to make these healthy cookie dough Easter eggs:
Oats – oats ground into a fine flour make a great substitute to regular flour. It’s much higher in fibre, which a lot of us don’t get enough of. Using oats to make healthier treats is an easy way to bump up your fibre intake. It’s also really cheap. I make my own oat flour by blending oats into a fine flour in a high-speed blender.
Peanut butter – nut butters in general are a great source of heart healthy fats. You can use any nut butter you prefer. You can even make this recipe nut-free by using a seed butter like tahini or sunflower seed butter.
Maple syrup – every sweet treat needs some form of sweetness. This also helps everything hold together and create the perfect texture.
Coconut oil – this adds just a little bit of extra moistness. You can substitute it with more nut butter if you prefer.
Chocolate chips – because no cookie dough recipe (or Easter recipe!) is complete without some form of chocolate.
Salt & vanilla – to help enhance all the flavours.

Healthy Cookie Dough Easter Eggs
Ingredients
- 120g oat flour*
- 125g peanut butter**
- 3 tbsp maple syrup***
- 2 tbsp coconut oil melted
- 1 tsp vanilla extract
- 1/4 tsp salt
- 35g chocolate chips I used dark chocolate chips
Instructions
- Mix the peanut butter, maple syrup, melted coconut oil and vanilla in a large bowl.
- Fold in the oat flour and salt until you have a smooth dough.
- Place between 2 pieces of parchment paper and roll out to 1/2 inch thickness. Refrigerate for 15-30 minutes.
- Use an egg shaped cookie cutter to cut out the eggs. Sprinkle a few chocolate chips on top and press them down lightly.
I wouldn’t suggest honey as an alternative for a vegan recipe! Also some oats aren’t safe to eat without cooking, for example steel cut oats and some others, you should look up to check if the ones you’re using are! Apart from those couple of comments, these look soo good!!
Thank you for your feedback Holly 🙂 the honey is a suggestion for those not following a vegan diet and have it in their cupboard instead of maple syrup. As for the oats, if you struggle to digest them, you can pan toast them first before blending into a flour 🙂
