Basic Pancake Recipe
There are so many healthy pancake recipes out there and I’ve made a few different varieties, but I find that sometimes the most basic and simple recipe works best. I like making a basic pancakes batter by mixing just a few ingredients together. That way I can go all out and go crazy with the toppings!
I don’t normally make pancakes during the week. In fact I rarely make pancakes if I’m not eating them with my husband. It’s like a weekend treat for both of us – a way to make us feel like it’s actually the weekend!

Basic Pancake Recipe
Serves: 2 (11-12 pancakes)
Dry ingredients:
- 1 cup oat flour (use gluten-free oats if you want gluten-free pancakes)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 2 tbsp stevia (or any other sweetener)
Wet ingredients:
- 1 cup milk (any milk you prefer. I used unsweetened almond milk)
- 1/4 cup yogurt (full fat, fat free…etc)
- 1 egg
- 1 tbsp oil*
Directions:
- In a bowl, mix together the dry ingredients
- In a separate bowl, mix the wet ingredients then pour into the bowl of dry ingredients and mix until combined.
- Heat a little bit of oil in a skillet, drop 2 tbsp for each pancake and cook on each side on medium heat for a minute or so.

*You can use any type of oil, butter or nut butter. I used Tahini to make these pancakes for an extra hint of flavour 🙂
Any topping would go with these pancakes. Feel free to use fruit, nuts, dried fruit, syrups…the possibilities are endless!
I made a simple banana ‘sauce’* to drizzle over my pancakes. I also used some Walden Farms calorie free chocolate sauce, raspberries and banana slices.
*Banana sauce: all I did was blend 1 ripe banana with 2 tbsp of yogurt. It tastes so delicious and sweet without the need to add extra sweetener 🙂
