These chocolate date nut bites are my new favourite snack. They includes everything I love – dates, nuts, cardamom and chocolate. Bite sized treats that are great as a snack on-the-go or a healthier dessert. Place them in mini cupcake cases and they make the perfect edible gift too!

How to make these chocolate date nut bites:

Add the dates and butter to a large pan and cook over a medium-low heat.

Once the butter is melted and the dates start to soften, mash with the back of a wooden spoon to create a paste.

Optional – Toast the almonds in a dry pan for a few minutes, then allow to cool.

Pulse the almonds in a food processor using 1-second bursts until you have a crumb consistency, then add to the date mixture along with the cardamom and a pinch of salt.

Allow to cool enough to handle with your hands, then divide the mixture into 2 equal parts and roll each into a think, long log. Roll in sesame seeds to coat.

Use a metal straw, or the bottom of a teaspoon (or anything else you have that’s metal, long and cylindrical) to press down the middle to make a well for the chocolate.

Break up the chocolate into a heat-proof bowl and melt in the microwave, stirring every few seconds so it doesn’t burn.

Mix in the tahini, then carefully pour into the well you created. Top with an optional drizzle of tahini, then run a sharp knife/cocktail stick down the middle to create a swirl affect.

Refrigerate until the chocolate is set, then slice and enjoy!
