Pistachio has definitely become the “it” flavour across desserts, coffee drinks, and sweet treats in general lately. It has well and truly taken over the food world, and for good reason. I’ve been obsessed with pistachios and anything pistachio flavour since I was a little girl. Growing up eating pistachios has definitely helped make a permanent place for the humble nut in my heart. I’ve made everything from pistachio bars, pistachio cookies to pistachio cake and pistachio overnight oats. It only seemed fitting that I add a pistachio flavoured mug cake to my recipe portfolio.

This recipe was actually inspired by the peanut butter mug cake I made not too long ago – all I did was replace the peanut butter with pistachio butter. I love the green hue it gives this cake in a mug recipe. You can of course use any nut butter you prefer or use a seed butter for a nut-free version. 

This is not my only take on a pistachio mug cake – I made this ‘Dubai’ style pistachio mug cake earlier this year, which I made countless times during the summer. I wanted to create another version with less chocolate for those times when I’m not necessary craving chocolate, but still want something cakey and sweet. It’s simpler to make seeing as you literally mix everything in the ramekin without the different layers. Also, I’m aware that not everyone will be able to get their hands on Kunafa pastry to make it.

It takes about one to two minutes in the microwave, meaning you can go from craving to comfort almost instantly. No preheating, no mixing bowls, and no cleanup beyond the mug you eat from. That convenience makes it perfect for busy schedules – whether you need a quick breakfast, an afternoon energy boost, or a late-night treat that won’t have you waiting for an oven timer.

Portion control – Traditional baking often leads to leftovers, which is fine if you have many mouths to feed. But if you live alone or it’s just you and your partner for example, a whole cake seems like such a waste. I for one end up either forcing myself to eat it so it doesn’t go to waste, or I don’t finish it in time and have to get rid of leftovers. A cake in a mug recipe solves that. It’s a single-serving dessert, which naturally keeps portions in check and no leftovers to worry about.

What you’ll need to make this cake in a mug recipe:

Pistachio butter – Smooth natural pistachio butter, not the pistachio cream that people are using to make Dubai chocolate. I use this brand made with no added sugar, salt or anything else, just 100% pistachios. You can use other nut butters instead or a seed butter to make it nut-free. 

Egg – When a mug cake cooks in the microwave, it doesn’t have much time to develop structure like a baked cake does. The egg acts as a natural binder and leavening agent, helping hold everything together while giving the cake a light, fluffy texture.

Oats – I blend my oats into a fine flour using a high-speed blender. Oats is an amazing higher fibre and nutrient option to use instead of plain flour. It works really well in baked recipes like this cake in a mug recipe. Make sure you use gluten-free oats if you need the recipe to be gluten-free.

Maple syrup – It is a cake after all, so a little sweetener is needed. You can use any liquid sweetener like honey or agave if you prefer. 

How to make this this cake in a mug recipe:

  • Lightly oil one large mug or 2 ramekin dishes.
  • Add the egg, pistachio butter and maple syrup directly into the mug, or in a mixing bowl. Mix to form a batter, then fold in the flour, baking powder and salt.
  • If using a bowl, transfer into your mug or 2 ramekins, then sprinkle a few optional chocolate chips on top.
  • Microwave on high for 1-2 minutes (the time will depend on the strength of your microwave. Mine is a 900W microwave, so I only microwaved it for 1 minute).
  • * You want to stop cooking your mug cake a little earlier than you think as it will continue to cook as it cools down. If you leave it in for too long, the cake will be dry. Make sure you keep an eye on it while it cooks.
  • Allow to cool slightly, then dig in!
