No-bake recipes are my favourite kind of recipes. They’re so much quicker to make and a lot easier to master and get right. These no bake cookies are a great example of that. You mix all the ingredients in a bowl, then shape into cookies and you’re done! You do have to wait for them to set in the fridge, but that’s the hardest part of the recipe.

What you need to make these no bake cookies:
Oats – I love using jumbo oats to give the cookies a better bite. Dry toasting them before adding to the mix brings out their delicious nutty flavour. You can of course use porridge oats if that’s what you have available.
Almond butter – Helps bind everything together while adding creaminess. Almond butter is a great source of healthy fats, but also plant protein and fibre. You can use other nut butters like peanut, cashew or pecan butter.
Cocoa powder – For that rich chocolate taste, but also to pack in some flavonoids/antioxidants.
Milk – You can use any milk you prefer. I usually have oat milk in the fridge, so that’s what I use mostly.
Butter – Again, any butter will work dairy or dairy-free alternatives. You can also use coconut oil. We need some fat that’s solid when cold to help hold the cookies together as they chill in the fridge.
How to make these no bake cookies:

Dry toast the oats in a frying pan for 5-7 minutes on a medium heat.

Mix the almond butter, melted butter, maple syrup and milk in a bowl

Fold in the toasted oats, cocoa and salt. Mix to form a dough.

Using an ice cream scoop or a tablespoon, scoop out the mixture and drop onto a baking sheet lined with baking paper.

Shape into round cookies and refrigerate until set. Enjoy!
