These easy vegan vegetable fritters are a delicious and easy way to get your daily dose of vegetables. They are an excellent source of fibre, nutrients and antioxidants. You can enjoy them as an appetiser, side dish or snack.
Eating vegetables can be a challenge for many, especially when it comes to making it exciting. However, there are so many ways to make eating your veggies an enjoyable experience. With the right approach, and a handful of good recipes, you can make eating vegetables something that you look forward to every day!
We all know that eating your ‘5-a-day’ and ‘including the rainbow’ is something we all should be doing for our health and wellbeing. I think what most people struggle with is knowing how to cook vegetables, more so how to cook them in easy ways that will make them tasty without taking up too much time.
I’m always trying to find new ways to cook vegetables to make them tasty, fun and exciting. Many people find themselves stuck in a rut when it comes to vegetables. I used to be one of those people. I would buy the same 3-4 types of vegetables a week (usually frozen), then I’d microwave them and serve them with a side of hummus. They tasted great and took very little time to prepare. That’s why I ended up eating the same vegetables and preparing them in the same way for years.
It was only once I gave myself permission to explore and play around with different ways of cooking vegetables did I really start to enjoy eating them too! Once you start roasting, grilling and introducing more flavours into your veggie dishes, you will never want to go back to eating plain boiled bland vegetables.
Veggie fritters are a delicious and easy way to get your daily dose of veggies. They make the perfect snack or side dish, and can be served with a variety of dipping sauces or condiments. These easy vegan vegetable fritters are also incredibly versatile, so you can mix and match whatever vegetables you have on hand to create unique flavor combinations.
They only take a few minutes to make. You can double the recipe and save leftovers for the next coming days. I love reheating mine in the air fryer for a quick veggie fix first thing in the morning or when I’m feeling peckish in the afternoon. They actually taste so much better the next day heated up in the air-fryer or oven.
What you need to make these easy vegan vegetable fritters:
Vegetables – use anything you have available! I used a carrot, courgette, pepper and spring onions. However, you can use anything you have available in your fridge.
Spring onion and garlic – to add lots of flavour.
Fresh coriander – which I think should be in any fritter recipe!
Spices – I used a spice mix for ease, but you can add whatever your heart desires. Changing up the flavouring means you’ll feel you’re eating a new dish each time you make these!
Plain flour – you can use chickpea flour instead if you want a gluten-free recipe.

hi —- world almond flour work?
Hi 🙂 I don’t have much experience with almond flour (not easy to find in the UK), but I imagine it would work. Chickpea/Gram flour is a great alternative. Hope that helps.
Hi. I’m excited to make these. Quick question…what is smoke and spice seasoning? I cannot find a spice with that name.
It’s a spice mix I bought online. You can use any spices/spice mix you like. Or you can omit it completely 🙂
Thank You for the recipe! Ist worked great! =)
Glad you enjoyed them Natalie 🙂 Thank you for your feedback!
What kind of pepper?
Hi Joanne 🙂 I used a bell pepper – any colour you prefer.
Do you have any recommendations for the spices I should use for this recipe?
The result was absolutely amazing and I’ll be doing this as a starter for any parties I have!
Used a spice combination of turmeric, ground cumin, ras al hanout and a pinch of cayenne pepper. Gorgeous.
Might try with some kale next time for a little greenness of flavour.
I usually do fritters plain or Caribbean style. Wanted a recipe without using Saltfish, came across ur recipe, recognised ur name so made them. Picture wise not the same but had stir fry pack I wanted to use. Came out fine. Going to enjoy 😉
Just made these and they are so delicious! I had some Thai green curry paste to use and I put about a tablespoon in and it worked a treat! Thank you for a brilliant and easy recipe that works 🙏🏻🙏🏻🙏🏻
