Made at home in minutes and tastes just as good, if not better (in my opinion it’s the latter!). Don’t get me wrong, snickers are good, but for me they’re too sickly sweet. I’ve also developed a taste for dark chocolate, so milk chocolate just does not taste good to me anymore. 

Unlike traditional chocolate bars that are made with corn syrup, palm fat and emulsifiers, these date snickers offer a more nourishing option. The combination of fibre from the dates, protein and healthy fats from the peanuts/peanut butter, and antioxidants from the dark chocolate makes this a more balanced option when you’re looking for a treat. One that will satisfy your cravings while nourishing your body.

What you need to make this date snickers recipe:

Dates –  I love using Palestinian Medjool dates as they have the best fudgy, soft texture and have just the right level of sweetness without being too sweet. 

Peanut butter – I used natural smooth peanut butter, but you can use crunchy peanut butter. If you do, feel free to omit the peanuts since there will already be some crunch in the peanut butter itself. 

Peanuts – Salted peanuts work best. The saltiness works so well with the sweetness of the dates. Of course you can use unsalted peanuts if you want to reduce your salt intake. 

Dark chocolate – 70% dark chocolate or above is best. The bitter notes add so much depth of flavour turning these date snickers into a sophisticated bite size dessert.

Ingredients
 
 

  • 6 Medjool dates
  • 6 tsp smooth peanut butter
  • 20g salted peanuts
  • 60g dark chocolate melted

Instructions
 

  • Remove the stones from the dates, then press each into round cupcake silicon moulds.
  • Top with the peanut butter and a sprinkle of salted peanuts.
  • Finally drizzle the dark chocolate on top and freeze for around an hour.
  • Remove and serve!
