If you’re looking for a super easy and yummy dessert, look no further! These 5-ingredient no-bake peanut butter brownies are so moreish yet couldn’t be simpler to make!
No-bake desserts are my favourite type of treats to make. They’re so easy, call for few ingredients and taste so good! What I also love about them is that you can adjust the taste and texture as you go along rather than having to wait for something to bake before you know whether it’s worked or not!
Many of you following me on Instagram seem to prefer my easy, few ingredient recipes too, that’s another reason why I find myself gravitating back to this sort of recipe. These brownies are based on my very popular 5-ingredient chocolate covered brownies, only these are made with peanut butter instead of tahini!
You can use any nut butter really – almond, hazelnut, cashew butters as well as seed butters and tahini work really well too!
As well as being made with healthier ingredients, this recipe also happens to be vegan, gluten-free, grain-free and soy-free.
5-Ingredient No-bake Peanut Butter Brownies
Makes – 8
Ingredients
For the brownies
220g Medjool dates or soft dates
150g smooth peanut butter
45g cocoa powder
Pinch of salt
Peanut butter caramel layer
100g smooth peanut butter
1 tbsp maple syrup
Pinch of salt
For the chocolate topping
100g dark chocolate, melted
Method
Add the dates to a food processor along with the peanut butter and blend until you have an even mixture. Add the cocoa powder and salt and blend again to combine.
Press the mixture into a cake tin lined with baking paper – I used a 22×12 cm loaf tin.
Mix the peanut butter caramel ingredients in a bowl, then smooth over the brownies, then pour over the melted chocolate.
Freeze for 30 minutes, then slice into 8 squares. You can make smaller bite size version if you prefer.
Store in an air-tight container at room temperature or in the fridge for up to 5 days.
