Viral Cucumber Salad
This is my take on the viral cucumber salad that's all over social media at the moment. Easy, delicious and packed with flavour!

- 1 large cucumber
- 2 tbsp tahini
- 2 tsp harissa paste
- 1 tbsp Greek yoghurt or dairy-free yoghurt
- 1/2 tbsp lemon juice
- 1/2 tbsp pomegranate molasses
- 2 tbsp coriander finely chopped
- 1 tbsp toasted sesame seeds
- Pinch of salt
Use a Mandoline to slice your cucumber into very thin discs.
Add to a large jar or container along with the rest of the ingredients. Place the lid on and shake until the cucumber slices are coated evenly with all the ingredients.
Alternatively you can add all the ingredients to a mixing bowl and toss everything together to coat.
Serve immediately for a crunchier salad. You can store leftovers in the fridge, but the cucumber slices may become softer over time.
