Ferrero Rocher Stuffed Dates

A better for you dessert hat still tastes super indulgent. The perfect way to treat yourself or to gift to a loved one.

Ingredients
 
 

  • 220g Medjool dates around 12 dates
  • 4 tbsp hazelnut butter
  • 1 tbsp maple syrup Optional
  • 1 tbsp cocoa
  • 1-2 tbsp milk of choice hazelnut milk works really well!
  • 4 tbsp chopped hazelnuts

For the coating

  • 150g dark chocolate
  • 4 tbsp chopped hazelnuts

Instructions
 

  • In a bowl, mix together the nut butter, cocoa and maple syrup (if using any).
  • Depending on how runny the nut butter is, you may wish to add some milk to thin it out a little. Start off with 1 tbsp and add more as needed.
  • Fold in the chopped hazelnuts, then stuff each date with some of the filling. You have the option here to add a whole hazelnut in the middle.
  • Place the dates in the freezer for about an hour to make it easier to coat with the chocolate.
  • Melt the dark chocolate and fold in the rest of the chopped hazelnuts.
  • Dip each date in the chocolate coating and leave to set in the fridge for around 10 minutes
