Ferrero Rocher Stuffed Dates
A better for you dessert hat still tastes super indulgent. The perfect way to treat yourself or to gift to a loved one.

- 220g Medjool dates around 12 dates
- 4 tbsp hazelnut butter
- 1 tbsp maple syrup Optional
- 1 tbsp cocoa
- 1-2 tbsp milk of choice hazelnut milk works really well!
- 4 tbsp chopped hazelnuts
For the coating
- 150g dark chocolate
- 4 tbsp chopped hazelnuts
In a bowl, mix together the nut butter, cocoa and maple syrup (if using any).
Depending on how runny the nut butter is, you may wish to add some milk to thin it out a little. Start off with 1 tbsp and add more as needed.
Fold in the chopped hazelnuts, then stuff each date with some of the filling. You have the option here to add a whole hazelnut in the middle.
Place the dates in the freezer for about an hour to make it easier to coat with the chocolate.
Melt the dark chocolate and fold in the rest of the chopped hazelnuts.
Dip each date in the chocolate coating and leave to set in the fridge for around 10 minutes
