Ingredients
 
 

  • 1 can chickpeas drained and rinsed
  • 1/2 cucumber chopped
  • 200g plum tomatoes halved
  • 1/2 red onion finely chopped
  • 100g feta cheese
  • 20g parsley finely chopped

For the dressing

  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 garlic clove minced
  • 1 tsp oregano
  • 1/2 tsp chilli flakes
  • Salt & pepper to taste

Instructions
 

  • Add the chickpeas, cucumber, plum tomatoes, onions, parsley and feta to a large salad bowl.
  • Whisk together the dressing ingredients, then pour over the salad.
  • Toss everything together until everything is evenly coated with the dressing.
  • Garnish with more parsley and serve.
