- 1 can chickpeas drained and rinsed
- 1/2 cucumber chopped
- 200g plum tomatoes halved
- 1/2 red onion finely chopped
- 100g feta cheese
- 20g parsley finely chopped
For the dressing
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1 garlic clove minced
- 1 tsp oregano
- 1/2 tsp chilli flakes
- Salt & pepper to taste
Add the chickpeas, cucumber, plum tomatoes, onions, parsley and feta to a large salad bowl.
Whisk together the dressing ingredients, then pour over the salad.
Toss everything together until everything is evenly coated with the dressing.
Garnish with more parsley and serve.
