5-Ingredient Chocolate Orange Pudding

A simple 5-ingredient chocolate orange pudding that's prefect for the festive period and beyond! This simple dessert is guaranteed to be a crowed pleaser post Christmas dinner. It's easy to make with only a handful of ingredients and it also happens to be vegan, dairy-free, gluten-free and nut-free! A great one to add to your recipe catalogue for when you need a fuss-free speedy treat.

Ingredients
 
 

For the base

  • 6 digestive biscuits I used gluten-free
  • 20g melted butter/dairy-free butter melted

For the chocolate orange pudding

  • 250ml full-fat coconut milk
  • 1 orange juice & zest
  • 200g dark chocolate
  • 2 tbsp maple syrup* optional

Instructions
 

  • Add the digestives biscuits to a food processor and pulse until you have a fine crumb mixture. Add the melted butter and pulse again until combined.
  • Divide the base mixture between 6 small dessert glasses/pots and refrigerate while you make the chocolate orange layer.
  • Break up the chocolate into small pieces and add to a saucepan along with the coconut milk and orange juice.
  • Cook over a medium heat until the chocolate is completely melted and you have a smooth mixture.
  • Add the orange zest and sweetener (if using any). Give it a final mix, then pour on top of the chilled biscuit bases.
  • Leave to cool slightly before transferring to the fridge to set. Allow to chill in the fridge for 2-3 hours, or until set.
