Quinoa Stuffed Peppers

A great light dinner, side dish or snack. These Quinoa stuffed peppers are Gluten-free, dairy-free and vegan.


Quinoa Stuffed Peppers

Serves: 2-4


  • 1/2 cup quinoa
  • 1/2 cube vegetable stock mixed in 1 cup boiling water
  • 1 zucchini, finely chopped
  • 5-6 sun dried tomatoes, chopped
  • 1/2 onion, chopped
  • 1 garlic
  • Herbs (I used dried basil, dill and thyme)
  • Fresh parsley
  • Juice of 1 lemon
  • 2 peppers
  • Olive oil
  • Mozzarella for topping (optional)


  • First cut the 2 peppers in half, remove seeds, dry then drizzled with olive oil. Baked in a preheated 200*c oven for about 15 minutes.
  • While the peppers bake, Cooke the quinoa. Mix the vegetable stock in 1 cup of boiling water then add to the pan of quinoa. Bring to a boil then simmer for 15 minutes.
  • In a frying pan, I sautéed some onions, garlic, 1 chopped zucchini and some herbs (dill, thyme, basil), chilli flakes and the juice of 1/2 lemon.
  • Once the quinoa is cooked, mix in the onion mixture then add in the chopped sun dried tomatoes and chopped fresh parsley.
  • Spoon the quinoa into the pepper halves, top with some mozzarella then place back in the oven until the cheese has melted (Leave out the mozzarella to make it vegan friendly)
