Nectarine Overnight Oats
Overnight oats are a great healthy option if you don’t tend to find time in the morning to prepare breakfast. It doesn’t involve any cooking and you do all the preparation the night before. When I say ‘preparation’ I mean mixing a few ingredients together and throwing it in the fridge to chill overnight.
I really like making overnight oats because the flavour combinations are endless! All you need to do is add oats, some liquid (milk, yogurt, coconut water…etc) and you can go crazy with different fruit, nuts, nut butters, seeds and spices. You can even throw in some chocolate from time to time (cocoa, cacao and carob powder make for excellent indulgent chocolaty flavoured oats without any guilt!).

Nectarine Overnight Oats with Coconut and Goji Berries
- 1/4 cup oats
- 1/4 cup low fat Greek yogurt
- 1/4 cup milk (I used unsweetened almond milk)
- 1 tsp shredded coconut
- 1-2 tbsp goji berries
- 1 tsp honey (or any sweetener you prefer)
- 1/4 tsp vanilla extract
- 1 nectarine, chopped
Mix all the ingredients in a bowl. Cover and leave to chill in the fridge overnight. You can either add in the chopped nectarine the night before or just mix it in when you serve it in the morning which is what I did 🙂[/recipe_box]
Because there is no cooking involved and you can eat your nectarine overnight oats straight from the container you prepared and stored it in, there is very little washing up after! Another reason to make overnight oats 😉
