With it being so close to Halloween, there is pumpkin everywhere! So why not take advantage of this rare opportunity (Pumpkin is not so readily available in the UK)

It’s always good to have some homemade granola around the house for a quick breakfast or snack. I love topping yogurt with some crunchy granola that’s full of flavour, good carbs and healthy fats!

I decided to make clean eating pumpkin chocolate granola. I’m sure everyone will agree with me when I say pumpkin and chocolate go so well together! Throw in some cinnamon in the mix and you’re left with something so comforting, especially for this time of year.

Clean Eating Pumpkin Chocolate Granola

Makes: 2.5 cups

Dry Ingredients:

  • ½ cup plain oats
  • ¼ cup jumbo oats (or substitute with same amount of plain oats)
  • 2 tbsp cocoa
  • ¼ cup sunflower seeds
  • ¼ cup cranberries
  • ¼ tsp cinnamon
  • 2 tbsp ground flaxseed (I used Linwood’s milled flaxseed cocoa & berries)
  • Pinch of salt

Wet Ingredients:

  • 1/4 cup pumpkin puree
  • 1/4 cup agave nectar

Directions:

  • Preheat the oven to 170°C (150°C fan assisted)/ 325°F
  • In a bowl, mix the dry ingredients then add in the pumpkin puree and agave nectar. Mix well until everything is evenly combined.
  • Spread the granola mixture onto a baking tray. Make sure to use a tray big enough to have the granola on a single layer to make sure everything bakes evenly. Otherwise use 2 baking sheets.
  • Bake for 30 minutes, turning every 10 minutes. Make sure to keep an eye on it, with it being already dark in colour from the cocoa it will be more difficult to tell whether it’s overcooking or not! I checked mine every 5 minutes. Also, it becomes even cruncher once it cools down so you don’t want it to become too crunchy in the oven otherwise it will break your teeth once it’s cooled down!
  • Once the mixture has dried out, remove from the oven and leave to cool

I used this clean eating pumpkin chocolate granola recipe to make a healthy breakfast parfait. I layered banana yogurt (1 banana blended with 1/4 cup of low fat greek yogurt) with the granola and chopped kiwi. A delicious way to start the day I reckon 🙂

  1. hi Nadia! my boyfriend actually made this recipe a while ago for a competition (he works in a restaurant and it was among staff, it was a breakfast challenge), along with 3 other dishes. he had some leftover and brought it home and it was so freakin good! he did say he didn’t have enough time for it to cool so it was a bit soggy, but nonetheless delicious! i’m making this again soon and we’ll make sure it has enough cooling time 🙂

    1. Hi Sanju 😀 so glad you and your boyfriend liked my granola 🙂 you could leave it to bake a while longer next time. I guess it depends on the individual oven. I find that when I follow recipes I have to adjust the baking time because it either bakes too fast or it’s not ready when the baking time is up!
