As an IBS sufferer I really have to be careful what I eat, particularly for breakfast. Usually if I start the day off wrong, my digestive system will play up the rest of the day no matter what I do. I would get this heavy unsettling feeling in my stomach, like a brick. It feels like the food sits there for hours and I start feeling so tired, sluggish and lethargic. Pancakes were one of those foods that I had to avoid in the morning!

This smoothie tastes so so good, kind of like a chocolate milkshake! But all the ingredients will nourish and feed your body. The healthy carbs (from the banana) and protein (from the added protein powder) make it an excellent breakfast or post-workout meal.

I love vegetable and bean burgers. They may not taste like meat but they can be just as satisfying without leaving you feeling heavy and sluggish from the high fat and oil content. To me, normal meat burgers are a treat – one that I would only probably have once or twice a year if even that. These vegan burgers however, I would happily eat everyday!

Here’s my healthier version of the traditional Hot Cross Bun using spelt flour instead of plain or wholemeal flour. The texture is somewhat different but that’s to be expected since I’m not using the typical ingredients that make a hot cross bun light and fluffy, but I like denser breads and cakes anyway so I’m absolutely thrilled with the results!
