I feel that Brussels sprouts are neglected all year round apart from Christmas. I can only find them locally around this time and it makes me sad, because I LOVE BRUSSELS SPROUTS! I realise not everyone shares my passion for the humble sprout and I guess I can understand why. I always used to boil or steam my Brussels sprouts which I must admit did get boring after a while. That’s before I discovered roasting them instead!

I must admit I’m not the biggest fan of fruit pies, or cooked fruit desserts. I prefer eating my fruit raw and cold; however, rhubarb is one of those fruit (a vegetable, actually!) that you can’t eat any other way apart from cooked…so I thought why not give it a try. It’s so deliciously tart and not too sweet. In fact, I only used 2 tbsp sweetener in the filling and it was just right! Traditional recipes use anywhere between ½ and 1 cup of sugar for the filling alone!

I think salad can be enjoyed anytime of the year, there is no rule that states you can’t eat salads for winter too! This beetroot feta salad is perfect not only for this time of year, but for any time of the year. You get a little sweetness form the beetroot along with the richness the of the cheese, crunchiness of the walnuts and the fresh, crispiness from the spinach leaves…gorgeous!

This is another breakfast recipe inspired by cake! If I was ever asked this question ‘If you could only eat one cake for the rest of your life, what would it be?’ I would probably have to say ‘date and walnut cake’ even though it would be a painful decision to make since I love all and any type of cake! I have always preferred rich, dense cakes and loaves over light, spongy and creamy cakes.
