Quinoa is a grain that has gained a lot of popularity over the past few years although it had been consumed for thousands of years. Here’s a five reasons why you should include quinoa in your diet.
This recipe is as easy as they get! You literally only need 3 main ingredients and then you can add whatever else you like. Chia seeds have very quickly become one of my pantry staples that I can’t live without! I’ve been using them particularly in baking as a substitute for eggs, especially when I’m looking for something denser and less spongy. I think chia eggs work so much better than flax eggs, does anyone else think that?
You know sometimes when you come across a recipe and straight away you think “This looks too difficult” and you move on before actually reading the recipe and knowing what goes into it, well for me, homemade gnocchi was one of those recipes! I’d seen a few people making homemade sweet potato gnocchi but I’ve always thought there is no way this is not going to be fiddly! Now I realise how completely wrong I was!
Brownies are probably one of my favourite desserts. Dense, rich, sweet and most importantly full of chocolatey goodness! What’s not to love?! I don’t think I’ve ever come across anyone who doesn’t love brownies. However, they do tend to leave a heavy feeling in my stomach. Not surprising when you consider the mountain of sugar and fat that’s added to a typical brownie recipe.
Last week was actually warm enough for a frozen treat, looks like summer is finally here (even though it’s raining now as I’m writing this!!) I’ve really been craving some banana ice cream (nice cream, nana ice cream…or whatever you want to call it!) lately, which is basically frozen bananas blended into a thick ice cream like consistency. If you haven’t tried it, it’s definitely something you NEED to add to your ‘recipes to make’ list.
The secret ingredient in these blondies and what makes them healthy is – you’ve probably already guessed it – CHICKPEAS! Most of the healthy blondie recipes out there include some sort of nut butter. I wanted to create a nut free recipe for those of you allergic to nuts, and this is the result! Healthy, nut free, vegan, gluten free, dairy free and refined sugar free.
As an IBS sufferer I really have to be careful what I eat, particularly for breakfast. Usually if I start the day off wrong, my digestive system will play up the rest of the day no matter what I do. I would get this heavy unsettling feeling in my stomach, like a brick. It feels like the food sits there for hours and I start feeling so tired, sluggish and lethargic. Pancakes were one of those foods that I had to avoid in the morning!
This smoothie tastes so so good, kind of like a chocolate milkshake! But all the ingredients will nourish and feed your body. The healthy carbs (from the banana) and protein (from the added protein powder) make it an excellent breakfast or post-workout meal.
This banana blueberry baked oatmeal is vegan, dairy free and can easily be made gluten free. You could add some protein powder, nuts or seeds to make it a more well rounded breakfast.
I love vegetable and bean burgers. They may not taste like meat but they can be just as satisfying without leaving you feeling heavy and sluggish from the high fat and oil content. To me, normal meat burgers are a treat – one that I would only probably have once or twice a year if even that. These vegan burgers however, I would happily eat everyday!
