5-Ingredient Vegan Gingerbread Fudge

A simple no-bake and no-cook fudge made using healthier ingredients. These 5-ingredient vegan gingerbread fudge make for a lovely lighter treat to enjoy during the festive season, but also make a wonderful edible gift idea!    I made these chocolate dipped fudge squares last Christmas to take with me when I visited family members. I used one of my favourite ever recipes, this simple fudge recipe, but I gave it a festive twist by adding cinnamon, ginger and allspice.  They're perfect if you need a quick and easy treat to gift to loved ones or a lighter dessert to enjoy on the big day.  I know this is not your typical fudge recipe and I have had people asking why [...]

Vegan Protein Gingerbread Hot Chocolate

What's better than a warming hot cup of cocoa? This vegan protein gingerbread hot chocolate is exactly what you need to stay warm this winter.  Up until recently, I was never a hot chocolate girl and had never been interested in it...ever! Which is strange considering I'm such a huge chocolate fan. I've always preferred to eat my chocolate rather than drink it.  Around this time last year, all that changed. A chocolate brand gifted me some of their chocolate bars along with a tub of their hot chocolate. I thought why not give it a try since I have it. That was the day I developed this insatiable taste for hot chocolate that never went away. Most hot chocolate [...]

Vegan Orange Chocolate Truffles

These vegan orange chocolate truffles are super creamy and easy to put together. They make a lovely light post-Christmas dinner treat! Christmas desserts don't need to be complicated and time consuming to be impressive. These truffles are extremely easy to make and guaranteed to impress anyone. Especially those with a sweet tooth and a weakness for chocolate.  Anything orange + chocolate reminds me of Christmas. Although I'm not one to restrict myself from enjoying that flavour combination the rest of the year. Chocolate truffles are amazing as is, but with a hint of orange they just taste so much more moreish, don't you agree? The combination of cashews, milk, melted dark chocolate and coconut oil creates the perfect texture for [...]

Vegan Cheese Cranberry Butternut Squash Wreath

A festive vegan recipe that everyone can enjoy. This vegan cheese cranberry butternut squash wreath is the perfect plant-based alternative or addition to your Christmas dinner table.  Whether you're a vegan or not, it's always a good idea to have a plant-based option on the Christmas table. Especially now that more and more people are choosing to eat less meat and include more plant-based meals.  A few years ago I was very strict with my diet. I refused to eat any meat, eggs, dairy or gluten. After a while it started to feel quite restrictive and difficult to maintain. I spent most of my time planning, researching recipes and checking product labels. It became increasingly obvious to me, and everyone [...]

Cauliflower & Chestnut Soup (Vegan & Gluten-free)

This cauliflower & chestnut soup is delicious & warming. Perfect to enjoy during the festive season or even as a starter on Christmas day. There's nothing more comforting than a warming bowl of soup on a freezing cold day. The past week has been so cold that I'm finding myself craving nothing but soup, tea and hot chocolate.  I don't know about you, but we still have another week before Christmas Day and I've already overindulged way too much. It's just too tempting not to want to try all the Christmas foods and treats that pop up in supermarkets shelves around this time of year. The cold weather isn't helping with my insatiable appetite either. I definitely notice I feel [...]

Ferrero Rocher Stuffed Dates

A healthier treat to enjoy over the festive period. These Ferrero Rocher stuffed dates are so easy to make and only call for a handful of ingredients! I've been making stuffed Medjool dates for years, ever since I embarked on my healthy eating journey. It's such an easy dessert and tastes absolutely divine! A great way to satisfy my sweet tooth, but with better-for-me ingredients.  I know they don't taste exactly like a Ferrero Rocher, but I'd say they're not far off. The fudge like sweetness of the dates along with the hazelnut butter and dark chocolate coating make the perfect healthier substitute. To make them a little more indulgent, I dipped them in dark chocolate with chopped hazelnuts to [...]

Gluten-free Cranberry White Chocolate Tart

If you're looking for a dessert centre piece to serve to guests this Christmas, you need to make this gluten-free cranberry white chocolate tart. It's so delicious, super indulgent and looks stunning too!  This may not be your typical traditional festive dessert like your mince pies or Christmas puddings, but it's certainly a crowed pleaser. It makes a nice change to the dried fruit packed desserts, which not everyone likes, or the chocolate based alternatives.  Made up of a simple shortcrust pastry base, a fruity cranberry jam layer, all topped with a silky white chocolate topping. A deliciously creamy treat that's perfect for the festive period. Especially when shared with loved ones. The tartness of the cranberry goes so well [...]

Vegan & Gluten-free Florentines

These vegan & gluten-free florentines are the perfect cookie to enjoy during the festive period. Packed with nuts, cranberries and a hint of orange with a layer of dark chocolate to intensify the flavour! I've always loved florentines - they have the most beautiful crunch and a complex flavour from the nuts, spices and chocolate. I didn't realise how easy they were to make at home until I started to experiment with my own recipe. They would make a beautiful and thoughtful edible gift for your loved ones. All you have to do to make these vegan & gluten-free florentines is to add everything to a pan (apart from the chocolate), heat to combine, shape into cookies and bake! There [...]

Vegan Gingerbread Bundt Cake

All I want for Christmas is a yummy slice of cake in one hand and a warming cup of tea in the other. This vegan gingerbread bundt cake is the perfect treat for this time of year. Packed with spices and so easy to make. I find that the best way to get into the festive spirit is to bake a gingerbread treat. It doesn't matter what it is, whether it's a gingerbread house, gingerbread biscuits, or a gingerbread cake. All will leave your house smelling like Christmas! The warming spices and smell of molasses is enough to leave anyone feeling jolly.  Gingerbread is always my first go-to festive flavour, with chocolate orange being a close second. It never fails [...]

Middle Eastern Chickpea Aubergine Flatbreads

These Middle Eastern chickpea aubergine flatbreads are prefect for a healthier 'fakeaway'. They taste amazing, packed with flavour and are so easy to make! I grew up eating something called 'Lahm Bi Ajeen', which literally translates to 'meat in dough'. It consisted of a basic flatbread dough, topped with a tomato minced meat mixture. Like a Middle Eastern pizza, if you will, flavoured with Middle Eastern spices.  I've been making a vegan/vegetarian version for years, the toppings of which vary depending on my mood and what I had available at the time. However, chickpeas and aubergine are probably my favourite toppings for this recipe, so that's exactly what I'm using today. A Middle Eastern and Indian flavour fusion - I'm [...]
