I once ordered a salmon dish when having a catch up with a friend and it was served with a mango salsa. I thought it was so delicious and the flavoures complemented each other so well. I thought the mango was quite a nice alternative to add to salsa. I decided I would soon recreate the dish, this was two years ago! I recently remembered it and suddenly had a strong urge to make it!

I’m always making quinoa, but I rarely make it plain. I always add things like beans, nuts and lot of vegetables. It’s so easy and quick to make so it’s perfect for when you’re in a hurry and need something quick. I like to make a huge batch and store it in the fridge to have for lunch throughout the week. On most evening, I like making quick and simple recipes, like these healthy tuna patties. All you need to do is chop a few ingredients, mix everything in one bowl, shape into patties and shallow fry for a few minutes and you’ll have a tasty and satisfying meal. You can eat these tuna patties on their own with a side salad and sweet potato fried, or you can turn it into a burger with layers of tomato, lettuce, a slice of cheese and a drizzle of Sriracha…perfect!
